Mioroshi deba from Japanese knife giant TOJIRO is a true working horse. With its thick spine and the steel that is easily sharpened (Shirogami #2 steel), it features a traditional Japanese magnolia D-shaped handle (with a black plastic ferrule) for a firm and comfortable grip. The blade shape itself - Mioroshi deba - is designed to fillet larger fish (3kg and up).
The blade shape is longer, narrower and thinner compared to the normal deba shape - somewhere between a classic deba and a shorther yanagiba. The knife can also be used for other heavier kitchen tasks, such as deboning poultry. The blade length is 210mm (8.3") and the thickness is 5 mm.
The blade will develop patina! The knife is forged from Shirogami #2 steel, the hardness of around 61-62 HRC and is intended for the more demanding user who can handle and take care of it. The advantage of such a steel is that it has a very fine, gentle sharpness, is easy to sharpen and stays sharp for a very long time. Ballistol oil is recommended for the care of such blades.
