The TOJIRO Gyuto Sakuya 210mm (8.3") is an excellent choice if you’re looking for a versatile, low-maintenance Japanese knife that’s also budget-friendly. Made from stainless steel with a traditional wooden handle and minimalist blade finish, it offers classic Japanese aesthetics and reliable performance at an affordable price.

BLADE SHAPE:
The Sakuya Gyuto is a classic Japanese chef’s knife designed for maximum versatility. Its longer, slender blade with a gentle curve excels at slicing, dicing, and chopping a wide variety of ingredients — from vegetables and herbs to meat and fish. Perfect for both home cooks and professionals, it offers excellent control and precision for any task in the kitchen.

STEEL:
The core is made of VG-10 steel coated with 13 Chrome Stainless Steel, offering professional sharpness with easy maintenance.

VG-10 steel is stainless steel with relatively high Carbon (C) content (1%), 15% Chromium (Cr), 1% Molybdenum (Mo), 0.3% Vanadium (V) and 1.5% Cobalt (Co). The combination of Cr, Mo, and V forms a lot of hard carbides, making the steel abrasion resistant which translates to long-lasting, smooth sharpness. Heat treated to the hardness of 60-61 HRC.

GEOMETRY:
It has a double bevel (50/50 symmetrical) blade.

BLADE FINISH:
The highlight of this series is the surface treatment withelectrochemical oxidation. It is a process commonly used in medical technology which provides the blade with superior corrosion resistance and gives it a refined dark appearance. The jet-black damascus creates a contrast between the deep black surface and the shiny edge, reminiscent of the dark sky of a new moon and the silver glow of a crescent. 

Important for re-sharpening:
During sharpening, the black surface treatment may wear off partially. For a complete restoration of sharpness and aesthetic appearance, professional sharpening is recommended.

HANDLE:
The blade was fitted with an octagonal traditional Japanese (wa) handle, made out of ebony wood with an octagonal shape, so it will fit equally well into the hands of right- or left-handed users. Ebony is used because of its incredible features (hardness, strength, and rich aesthetic, including its dark color, visible grain), and rich cultural heritage.
